Ingredients
- 200 g Lady Finger Diced (Bhendi Cut)
- 500 g X 2 Organically Grown Potato Combo
- 100 g Sambar Onion Peeled
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 100 g Catch Sprinklers - Iodized Table Salt
Instructions
- 1. Wash and trim 1 1/2 cups of okra, then cut them into bite-sized pieces. Peel and dice 2 medium potatoes into small cubes.
- 2. Heat 1/4 cup of oil in a large skillet over medium heat.
- 3. Add 1 diced onion to the skillet and sauté until translucent, about 3-4 minutes.
- 4. Stir in the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they start to soften.
- 5. Add the okra to the skillet, season with 1 teaspoon of salt, and cook for another 10-12 minutes, stirring frequently, until the vegetables are tender and lightly browned.
- 6. Adjust seasoning if needed, remove from heat, and serve warm as a main dish or side.
