Ingredients

  • 125 g Mooz Butter Garlic & Herbes
  • 100 g Sambar Onion Peeled
  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 250 ml Coco Mama Coconut Milk
  • 500 g Whole Farm Grocery Raisins 500 G
  • 50 g Zoff Premium Indian Bay Leaf
  • 50 g On1Y Whole Cardamom Green
  • 1 pack (50 g) Tmi Colman Laung Cloves
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 80 g Urban Platter Cayenne Pepper Powder

Instructions

  1. 1. Melt 2 tablespoons of butter in a medium saucepan over medium heat.
  2. 2. Add 1/2 cup of finely chopped onion and sauté until golden brown, about 5 minutes.
  3. 3. Stir in 1 cup of rice and cook, stirring continuously, until the rice is lightly toasted, about 3 minutes.
  4. 4. Add 2 cups of coconut milk, 1/4 cup of raisins, 1 bay leaf, 1 cardamom pod, 3 cloves, 1 teaspoon of salt, and 1/4 teaspoon of cayenne pepper. Stir to combine.
  5. 5. Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for 14 minutes, or until the rice is tender and the liquid is absorbed.
  6. 6. Remove the bay leaf, cardamom pod, and cloves before serving. Fluff the rice with a fork and serve warm.
