Ingredients
- 2 x 400 g Good To Go Boneless Chicken Breast - Pack Of 2
- 25 g Thai Sweet Basil Leaves
- 1 ltr Bertolli Extra Virgin Olive Oil
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 1 pack (1 kg) 921 Everyday Long Grain Rice
- 25 g Parsley
- 50 g Sakthi Curry Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Season 500 g chicken breast with 1 tbsp sweet basil, 1 tsp curry powder, 1 tsp salt, and 1/2 tsp black pepper.
- 2. Heat 1 tbsp olive oil in a large skillet over medium heat. Add the seasoned chicken, 1 diced onion, and 1 diced green pepper. Stir-fry until the chicken starts to brown, about 5-7 minutes.
- 3. Add 1/2 cup water to the skillet, cover, and reduce the heat to low. Let it simmer for 20 minutes, stirring occasionally.
- 4. Rinse 3 cups of rice thoroughly and stir it into the skillet. Add enough water to just cover the mixture.
- 5. Cover the skillet tightly and cook on low heat until the rice is tender and the water is absorbed, about 15-20 minutes.
- 6. Fluff the rice with a fork, garnish with 2 tbsp chopped parsley, and serve hot.
