Ingredients

  • - Red Chilli
  • 200 g Green Peas
  • 250 g Carrot
  • 100 g Quinoa
  • 500 ml Water
  • 1 kg Yellow Moong Dal
  • 500 g Ghee
  • 20 g Turmeric Powder
  • 250g Ginger
  • 250g Coriander
  • 10G Salt

Instructions

  1. Step 1: Heat ghee in a pressure cooker or deep pan over medium heat. Add cumin seeds and let them splutter.
  2. Step 2: Add grated ginger and sauté for a minute until fragrant.
  3. Step 3: Stir in turmeric powder, red chili powder, and diced carrots. Cook for 2-3 minutes.
  4. Step 4: Add rinsed quinoa, soaked moong dal, green peas, and salt. Mix well.
  5. Step 5: Pour in 3 cups of water and bring the mixture to a boil.
  6. Step 6: Cover and pressure cook for 3 whistles or cook covered in a deep pan until quinoa and dal are tender (approximately 20-25 minutes).
  7. Step 7: Once cooked, fluff the khichdi gently with a fork. Garnish with chopped coriander leaves before serving.
