A flavorful yet light Jain-style khichdi made with quinoa, vegetables, and Maharashtrian spices, perfect for a satisfying and nutritious dinner.
Ingredients
- - Red Chilli
- 200 g Green Peas
- 250 g Carrot
- 100 g Quinoa
- 500 ml Water
- 1 kg Yellow Moong Dal
- 500 g Ghee
- 20 g Turmeric Powder
- 250g Ginger
- 250g Coriander
- 10G Salt
Instructions
- Step 1: Heat ghee in a pressure cooker or deep pan over medium heat. Add cumin seeds and let them splutter.
- Step 2: Add grated ginger and sauté for a minute until fragrant.
- Step 3: Stir in turmeric powder, red chili powder, and diced carrots. Cook for 2-3 minutes.
- Step 4: Add rinsed quinoa, soaked moong dal, green peas, and salt. Mix well.
- Step 5: Pour in 3 cups of water and bring the mixture to a boil.
- Step 6: Cover and pressure cook for 3 whistles or cook covered in a deep pan until quinoa and dal are tender (approximately 20-25 minutes).
- Step 7: Once cooked, fluff the khichdi gently with a fork. Garnish with chopped coriander leaves before serving.
