Ingredients
- 500 ml Water
- Pcs Chings Masala Chicken Chilli
- 500 g Rice
- 200 ml Mustard Oil
- 250g Green Chilli
- 500 G Ridge Gourd/Jhinge Tori(500Gm)

- 250g Garlic
- 250g Ginger
- 50 g Cumin Powder
- 100 g Coriander Powder
- 20 g Turmeric Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat the mustard oil in a heavy-bottomed pan or kadhai until it reaches its smoking point. Reduce the heat and let it cool slightly.
- Step 2: Add the panch phoran to the oil and let it splutter for a few seconds.
- Step 3: Add the sliced onions and sauté until they are golden brown. Then add the minced garlic and grated ginger. Sauté for another 2 minutes.
- Step 4: Add the chicken pieces to the pan and stir well. Cook on medium heat for 5 minutes, allowing the chicken to sear lightly.
- Step 5: Add turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the chicken evenly with the spices.
- Step 6: Add the chopped ridge gourd, drumsticks, and slit green chilies to the pan. Stir everything together and cook for 3-4 minutes.
- Step 7: Pour 2 cups of water into the pan, cover with a lid, and let the curry simmer on low heat for 20-25 minutes until the chicken is tender and the vegetables are cooked through.
- Step 8: Taste and adjust the seasoning if necessary. Garnish with freshly chopped coriander leaves before serving.
- Step 9: Serve hot with steamed parboiled rice for a balanced and delicious Odia lunch.
