Ingredients

  • 100 g Coriander Leaves
  • 250 ml Lemoneez
  • loose Ginger
  • medium Chilli Green Long
  • - Mint Leaf
  • 100 g Tamarind
  • 50 g Asafoetida Powder
  • 50 g Cumin Powder
  • 200 g Black Salt
  • 170 g Salted Boondi
  • 500 g Sugar
  • 500 ml Water
  • 50 g Black Pepper

Instructions

  1. 1. Wash a handful of mint leaves and coriander leaves thoroughly to remove any dirt. Set them aside.
  2. 2. In a blender, combine the mint leaves, coriander leaves, a small piece of ginger, and one green chili. Blend them into a smooth paste using a little water if necessary.
  3. 3. In a large bowl, add 250 ml of lemon juice and mix in the blended paste.
  4. 4. Stir in 1 teaspoon of cumin powder and a pinch of asafoetida powder for additional flavor.
  5. 5. Add sugar to taste, until the desired sweetness is achieved. Mix well until the sugar is completely dissolved.
  6. 6. Gradually add cold water while stirring constantly, adjusting the amount to your desired consistency.
  7. 7. Taste and adjust the seasoning if needed. Add more chili for spice, sugar for sweetness, or cumin for earthiness.
  8. 8. Refrigerate the Jaljeera for at least 30 minutes to let the flavors blend well and serve it chilled.
  9. 9. Just before serving, sprinkle some salted boondi on top for a crunchy garnish.
