Frequently asked questions

Why is it important to aerate the urad dal batter for Dahibara?
Aerating the batter by whisking ensures the dumplings (bara) turn out light and fluffy when fried. This step traps air in the batter, making the texture airy and preventing dense or heavy dumplings, which can ruin the dish’s signature softness.
What role does jaggery powder play in the aloodum curry?
Jaggery powder adds a subtle sweetness that balances the tanginess of the tamarind paste and the heat from the spices. This sweet-tangy combination is essential for achieving the authentic flavor profile of aloodum in Dahibara Aloodum.
How can I adjust the spice level in Dahibara Aloodum?
To reduce spice, use fewer green chilies and red chili powder in the aloodum curry. For a spicier version, you can increase these ingredients or add a pinch of extra chaat masala during the final garnishing for an added kick.
Can Dahibara Aloodum be made ahead of time and reheated?
Yes, you can prepare the aloodum curry and fried dumplings ahead of time. Store the dumplings separately and soak them in warm water just before serving to retain their texture. Reheat the aloodum on low heat and assemble the dish fresh for best results.
