Ingredients

  • 100 g Tamarind
  • medium Chilli Green Long
  • 500 g Urad Dal
  • 1 l Refined Soyabean Oil
  • 50 g Asafoetida Powder
  • 100 g Red Mustard Seeds

Instructions

  1. 1. Soak a handful of tamarind in warm water for about 15 minutes, then squeeze and strain to extract the pulp.
  2. 2. Heat 2 tablespoons of soyabean oil in a pan on medium heat.
  3. 3. Add 1 teaspoon of red mustard seeds to the pan and let them crackle.
  4. 4. Add a pinch of asafoetida (hing) to the pan and stir.
  5. 5. Add 2 tablespoons of urad dal and sauté until golden brown.
  6. 6. Chop 3-4 medium green chilies and add them to the pan, sauté for a few minutes.
  7. 7. Pour the extracted tamarind pulp into the pan and mix well.
  8. 8. Cook for about 5-10 minutes until the chutney thickens slightly.
  9. 9. Season with salt to taste and remove from heat.
