Ingredients
- 100 g Sambar Onion Peeled
- 200 g Orange Carrot (Gajar)
- 250 g Zucchini Green
- 1 pc Cabbage Red
- 100 g Garlic - Single Clove
- 16 g Orika Oregano
- 80 g Knorr Vegetables Stock Cubes
- 200 g Hommade Tomato Puree
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 500g to 700g Turkey
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 100 g Everest White Pepper
Instructions
- 1. Heat a large kettle over medium heat. Add 1/2 lb ground turkey and cook, stirring frequently, until fully browned and cooked through, about 5-7 minutes.
- 2. Add 1 cup chopped onion, 1 cup diced carrot, 2 diced zucchini, 2 cups shredded cabbage, and 1 minced garlic clove to the kettle. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
- 3. Stir in 1 tsp salt, 1/4 tsp white pepper, and 1 tsp oregano. Pour in 2 cans of vegetable stock and 1 can (16 oz) of tomato puree. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
- 4. Add 1 can of chickpeas (undrained) to the soup and stir well. Simmer for an additional 5 minutes to heat the chickpeas through.
