Ingredients

  • 100 g Sambar Onion Peeled
  • 200 g Orange Carrot (Gajar)
  • 250 g Zucchini Green
  • 1 pc Cabbage Red
  • 100 g Garlic - Single Clove
  • 16 g Orika Oregano
  • 80 g Knorr Vegetables Stock Cubes
  • 200 g Hommade Tomato Puree
  • 400G Chtoura Foods Boiled Chickpeas In Brine
  • 500g to 700g Turkey
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 100 g Everest White Pepper

Instructions

  1. 1. Heat a large kettle over medium heat. Add 1/2 lb ground turkey and cook, stirring frequently, until fully browned and cooked through, about 5-7 minutes.
  2. 2. Add 1 cup chopped onion, 1 cup diced carrot, 2 diced zucchini, 2 cups shredded cabbage, and 1 minced garlic clove to the kettle. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  3. 3. Stir in 1 tsp salt, 1/4 tsp white pepper, and 1 tsp oregano. Pour in 2 cans of vegetable stock and 1 can (16 oz) of tomato puree. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
  4. 4. Add 1 can of chickpeas (undrained) to the soup and stir well. Simmer for an additional 5 minutes to heat the chickpeas through.
