Ingredients
- 1 ltr Bertolli Extra Virgin Olive Oil
- 200 g Orange Carrot (Gajar)
- 150 g Yu 100% Whole Wheat Noodles
- 200 g Hommade Tomato Puree
- 200 g Hydroponic Sweet Bell Pepper (Cocktail)
- 16 g Orika Oregano
- 750 ml Catch Clear Lemon N Lime Flavoured Water
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 50 g On1Y Onion Powder
Instructions
- 1. In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of diced carrots and sauté for 3-4 minutes until slightly softened.
- 2. Stir in 1 teaspoon of onion powder and 1 cup of water. Cover and cook over low heat for about 10 minutes, allowing the carrots to become tender.
- 3. Add 6 oz of whole-grain noodles, 1 cup of tomato puree, 1 cup of diced bell pepper, 1 teaspoon of dried oregano, and 1/8 teaspoon of black pepper. Stir to combine.
- 4. Bring the mixture to a boil, then reduce the heat to medium-low. Cover and cook for about 8 minutes, stirring occasionally, until the noodles are cooked and the vegetables are tender. If needed, add 2-3 tablespoons of water to prevent sticking.
- 5. Once everything is cooked through, remove from heat and let it sit for a minute before serving. Garnish with additional basil if desired.
