- 500 g Carrot
- 100 g Celery
- 100 g Sambar Onion Peeled
- 250 g Zucchini Yellow
- 125 g Red Bell Pepper
- 400G Freshos Corn Kernels
- 50 g On1Y Black Peppercorns With Grinder
- 200 g Hydroponic Sweet Bell Pepper (Cocktail)
- 100 g Catch Sprinklers - Iodized Table Salt
Instructions
- 1. Chop 2 cups of carrots, 1 cup of celery, and 1 cup of onion into small pieces. Dice 2 medium zucchini and 1 red bell pepper.
- 2. In a 5-quart kettle, combine the chopped carrots, celery, onion, zucchini, and red bell pepper. Add enough water to cover the vegetables and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- 3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
- 4. Add 1 cup of diced bell pepper and 1 cup of whole kernel corn to the kettle. Stir well and simmer for an additional 10 minutes to heat through.
- 5. Taste and adjust seasoning if needed. Serve the soup hot as a main course for dinner, optionally accompanied by a slice of whole-grain bread.
