Ingredients
- 250 ml Lemon Juice Concentrate
- 50 g Parsley Leaves
- - Thyme Leaves
- 250 ml Olive Oil
- 500 g Refined Flour
- 50 g Black Pepper
- 100 g Salt
- 100 g Garlic
- - Vegetable Stock Cubes
Instructions
- 1. Pat the tilapia fillets dry with a paper towel and season both sides with salt, black pepper, and dried thyme.
- 2. Heat 1 tbsp olive oil in a non-stick skillet over medium heat. Coat the fillets lightly with flour and cook for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
- 3. In the same skillet, add the remaining olive oil and garlic. Sauté for 1 minute until fragrant.
- 4. Pour in the vegetable stock and lemon juice, scraping up any brown bits from the pan. Bring to a simmer and cook for 2 minutes.
- 5. Whisk in the plant-based crème fraîche alternative and chopped parsley. Let the sauce thicken slightly for 3-4 minutes over low heat.
- 6. Return the cooked tilapia fillets to the skillet and spoon the sauce over the top. Simmer for an additional 2 minutes to blend the flavors.
- 7. Serve the thyme-crusted tilapia warm, garnished with extra parsley, alongside your choice of steamed vegetables or a side salad.
