Ingredients
- 500 g Chicken Whole
- 200Ml Kara Coconut Milk Classic (200ml)
- 1 kg Bell Peppers
- 250 g French Beans
- 200 ml Fish Sauce
- 1 bunch Thai Basil
- 500g Good Life Raw Peanuts 500 G
- 1 liter Sunflower Oil
- 50G Real Thai Canned Red Curry Paste (50g)
- 700 Ml Healthy Boy Thai Soy Sauces
- 500 g Sugar
Instructions
- 1. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the chicken pieces and stir-fry for 4-5 minutes until lightly golden and cooked through. Remove the chicken from the wok and set aside.
- 2. In the same wok, add the Thai red curry paste and stir-fry for 1-2 minutes until fragrant. Lower the heat to medium and pour in the coconut milk, stirring well to combine.
- 3. Add the sliced red and yellow bell peppers, green beans, and sliced red chili (if using) to the wok. Stir and cook for 3-4 minutes until the vegetables are slightly tender but still crisp.
- 4. Return the chicken to the wok, then add the fish sauce, soy sauce, and sugar. Mix everything well and simmer for 2-3 minutes to allow the flavors to meld together.
- 5. Stir in the fresh basil leaves and lime juice. Cook for another minute, then remove from heat.
- 6. Transfer the wok-tossed spicy coconut chicken to a serving dish. Garnish with crushed roasted peanuts and serve hot with steamed jasmine rice or flatbreads.
