  1. 1. Gather all ingredients: 2 boneless chicken breasts (approx. 300g), 1 large Vidalia onion (or any sweet onion), 1 medium cucumber, 1 medium tomato, 1 green chili (optional), 1/2 cup fresh coriander leaves, 1/4 cup plain yogurt, 1 tbsp lemon juice, 1 tsp roasted cumin powder, 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1/2 tsp garam masala, 1 tbsp olive oil, salt to taste, and freshly ground black pepper.
  2. 2. Clean the chicken breasts thoroughly under running water and pat them dry with a paper towel.
  3. 3. In a small bowl, mix 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp garam masala, and a pinch of salt. Rub this spice mixture evenly over the chicken breasts.
