Ingredients

  • 1 kg Basmati Rice
  • 100 g Garlic
  • 500 g Onion
  • 250 g Carrot
  • - Bell Peppers
  • 1 pc Broccoli
  • 200g Tata Sampann Premium Cashews Whole : 200 G
  • 80 g Soya Sauce
  • 300 g Ginger Paste
  • 240G Hoisin Sauce
  • 500 Ml Champion Oil

Instructions

  1. 1. Prepare the vegetables: chop 1/2 cup broccoli, 1/2 cup bell peppers, 1/2 cup carrots, 1/2 cup zucchini, and 1/4 cup onions into bite-sized pieces.
  2. 2. Heat 1 tbsp of oil in a wok or large pan over medium-high heat. Add 1/4 cup of cashews and stir-fry until golden brown. Remove and set aside.
  3. 3. In the same wok, add 1 tbsp of oil. Add 1 tsp minced garlic and 1 tsp minced ginger. Sauté for 30 seconds until fragrant.
  4. 4. Add the chopped onions and stir-fry for 1-2 minutes until translucent.
  5. 5. Add the carrots and broccoli first, as they take longer to cook. Stir-fry for 2-3 minutes.
  6. 6. Add the bell peppers and zucchini. Stir-fry for another 2-3 minutes until all vegetables are tender yet crisp.
  7. 7. In a small bowl, mix 2 tbsp soy sauce, 1 tbsp hoisin sauce, 1 tsp sesame oil, and 1/2 tsp sugar. Pour this sauce over the vegetables.
  8. 8. Toss the vegetables well to coat them evenly with the sauce. Add the roasted cashews and mix gently.
  9. 9. Garnish with 1 tbsp chopped spring onions and 1 tsp sesame seeds. Serve hot as a side dish or with steamed rice.
