Ingredients

  • 250 g Carrot
  • 250 g Cucumber
  • 250 g Spinach
  • 1 Kg Tanifuji Sticky Short Grain Sushi Rice
  • 200 ml Sesame Oil
  • 200 g Table Salt
  • 80 g Soya Sauce

Instructions

  1. 1. Rinse 1 cup of short-grain rice until the water runs clear. Cook the rice with 1 1/4 cups of water in a rice cooker or pot until fully cooked. Let it cool slightly.
  2. 2. In a small bowl, mix 1 tbsp rice vinegar, 1 tsp sugar, and 1/4 tsp salt. Gently fold this mixture into the cooked rice. Set aside.
  3. 3. Peel and julienne 1 cucumber, 1 carrot, and 100g of spinach. Blanch the spinach in boiling water for 30 seconds, then drain and squeeze out excess water.
  4. 4. Heat 1 tsp of sesame oil in a pan. Sauté the julienned carrot and spinach separately with a pinch of salt until tender. Set aside.
  5. 5. Toast 4 sheets of roasted seaweed (kim) lightly over a low flame for a few seconds until pliable.
  6. 6. Place a bamboo sushi mat on a flat surface. Put one sheet of kim on the mat, shiny side down. Spread a thin layer of seasoned rice evenly over the kim, leaving a 1-inch border at the top.
  7. 7. Arrange the cucumber, carrot, and spinach horizontally in the center of the rice. Add 2 strips of pickled radish (danmuji) for extra flavor.
  8. 8. Gently roll the kimbap using the bamboo mat, starting from the bottom and pressing firmly to seal the roll. Repeat with the remaining ingredients.
  9. 9. Brush the rolls lightly with sesame oil and slice into 1-inch pieces using a sharp knife. Serve immediately.
