Ingredients

  • 250 G Akkha Masoor
  • - Olive Oil
  • 20 g Oregano
  • - Basil Leaves
  • 100 g Hing Khoda
  • - Besan
  • 500 g Tomato - Hybrid
  • 500 g Capsicum Green
  • 52 g Paprika Powder
  • 50 g Black Pepper Powder
  • 100 g Salt
  • 250 ml Lemon Juice Concentrate
  • 100 g Garlic
  • 500 g Onion

Instructions

  1. 1. In a large mixing bowl, mash the cooked green lentils until slightly chunky. Add the -free breadcrumbs, chickpea flour, and flaxseed meal, and mix well to combine.
  2. 2. Heat 1 tablespoon of olive oil in a small pan over medium heat. Add the chopped tomato, green bell pepper, and hing, and sauté for 3-5 minutes until softened. Remove from heat and allow to cool slightly.
  3. 3. Add the sautéed vegetables to the lentil mixture, followed by dried oregano, dried basil, paprika, black pepper, salt, fresh parsley, and lemon juice. Mix thoroughly until the mixture holds together when pressed.
  4. 4. Using your hands, shape the mixture into small, bite-sized balls or patties. Place them on a plate and refrigerate for 15-20 minutes to firm up.
  5. 5. Heat the remaining olive oil in a non-stick pan over medium heat. Cook the lentil bites in batches, turning occasionally, for 8-10 minutes until golden brown and crispy on all sides.
  6. 6. Remove from the pan and place them on a paper towel to absorb any excess oil. Serve warm with your favorite vegan dip or salad.
