Ingredients
- 250 g Carrot
- - Vegetable Stock Cubes
- 1 pc (approx. 500 g to 800 g) Cabbage
- 200 g Table Salt
- 500 g Sugar
- 500g Gochujang (Korean Chili Paste)
- 90 g Dark Soy Sauce
Instructions
- 1. In a large pan, add 2 cups of water and bring it to a boil.
- 2. Add 200g of rice cakes (tteok) to the boiling water and cook for 5-7 minutes until they become soft. Drain and set aside.
- 3. In the same pan, heat 1 tablespoon of vegetable oil over medium heat.
- 4. Add 1 tablespoon of gochujang (Korean chili paste), 1 teaspoon of soy sauce, and 1 teaspoon of sugar. Stir well to combine.
- 5. Add 1 cup of vegetable stock to the pan and bring the mixture to a simmer.
- 6. Add the cooked rice cakes to the pan and stir to coat them evenly with the sauce.
- 7. Add 1 cup of sliced cabbage and 1/2 cup of sliced carrots to the pan. Cook for 5 minutes until the vegetables are tender.
- 8. Add 1/2 cup of sliced bell peppers and cook for an additional 2 minutes.
- 9. Season with salt to taste and remove from heat.
- 10. Garnish with 1 tablespoon of sesame seeds and 1 tablespoon of chopped spring onions (optional). Serve hot.
