Ingredients

  • 100 g Coriander Leaves
  • 100 g Garlic
  • medium Chilli Green Long
  • 250 g Cucumber
  • 100 g Ginger
  • - Chinkiang Rice Vinegar
  • - Urban Platter Sichuan Peppercorns
  • 1 l Refined Soyabean Oil
  • 500 g Sugar
  • 500 ml Light Soy Sauce
  • 10G Salt

Instructions

  1. 1. Wash and dry 2 medium cucumbers thoroughly. Trim the ends and slice them into thin rounds or half-moons, as preferred.
  2. 2. In a small bowl, mix 1 teaspoon of Szechuan peppercorns (lightly crushed), 1 tablespoon of Chinkiang vinegar, 1 tablespoon of light soy sauce, and 1 teaspoon of sugar until the sugar dissolves.
  3. 3. Heat 1 tablespoon of sesame oil in a small pan over medium heat. Add 2 finely chopped garlic cloves and 1 teaspoon of minced ginger, sautéing for 30 seconds until fragrant.
  4. 4. Pour the heated oil with garlic and ginger into the vinegar-soy sauce mixture. Stir well to combine.
  5. 5. Place the sliced cucumbers in a large mixing bowl. Add 1 finely chopped green chili (adjust to taste) and 1 tablespoon of chopped cilantro.
