Ingredients

  • 100 g Coriander Leaves
  • - Chicken Breast
  • 200 g Cheddar Cheese
  • 500 g Tomato - Hybrid
  • 100 g Lemon
  • 30 g Smoked Paprika Powder
  • 100 g Salt
  • 50 g Black Pepper

Instructions

  1. 1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the diced chicken and season with smoked paprika, cumin powder, salt, and black pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and slightly charred. Remove from the skillet and set aside.
  2. 2. In the same skillet, add the sliced jalapeños and sauté for 2-3 minutes until slightly softened. Remove and set aside.
  3. 3. Place one tortilla on a clean skillet over low-medium heat. Sprinkle half of the shredded cheddar cheese evenly over the tortilla.
  4. 4. Add the cooked chicken, sautéed jalapeños, diced tomato, and chopped cilantro evenly over the cheese layer. Top with the remaining cheese and cover with the second tortilla.
  5. 5. Cook the quesadilla for 2-3 minutes on one side until the tortilla is golden brown and crispy. Carefully flip and cook the other side for another 2-3 minutes until the cheese is fully melted.
  6. 6. Remove the quesadilla from the skillet and let it rest for 1 minute. Slice into wedges and serve warm with a lime wedge on the side for an added burst of freshness.
