- 500 g Jaggery Powder
- 100 g Unsalted Butter
- 100 g Salt
Instructions
- 1. Preheat your oven to 160°C (320°F) and prepare a water bath by placing a large baking dish filled halfway with hot water in the oven.
- 2. In a small saucepan, combine the jaggery or brown sugar and butter over medium heat. Stir until melted and caramelized, then pour the mixture into the bottom of a flan mold or ramekins to coat evenly. Set aside to cool.
- 3. In a blender, combine the full-fat milk, heavy cream, granulated sugar, eggs, egg yolks, vanilla extract, chipotle pepper, smoked paprika, and a pinch of salt. Blend until smooth and well combined.
- 4. Strain the blended mixture through a fine mesh sieve into the prepared flan mold or ramekins to ensure a silky texture.
- 5. Place the mold or ramekins into the prepared water bath and bake for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
