Ingredients
- 500 g Weikfield Cornstarch Amazingly Versatile Gluten Free
- 250 g Organically Grown Green Capsicum
- 200 g Peeled Sambhar Onion By Urban Harvest
- 900 G Kikkoman Naturally Brewed Dark Soy Sauce
- 40 g On1Y Ginger Powder
- 1 kg Whole Farm Grocery Sugar (Packet)
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 250 g Vistevia Sugar Free Tomato Sauce
Instructions
- 1. Cut 1 3/4 cups of canned diced tomatoes into smaller pieces if needed to mimic the texture of meat strips.
- 2. Drain 1 3/4 cups of canned diced tomatoes, reserving the liquid in a small bowl.
- 3. In the bowl with the reserved tomato liquid, mix 3 tbsp soy sauce, 1 tsp ground ginger, 1 tbsp cornstarch, and 1 tbsp sugar until smooth. Set aside.
- 4. Heat 2 tbsp oil in a large skillet or wok over high heat. Add the diced tomatoes and stir-fry for 2-3 minutes until slightly caramelized. Remove the tomatoes from the skillet and set aside.
- 5. In the same skillet, add 1 1/3 cups of sliced green pepper and 1 1/2 cups of sliced onion. Stir-fry for 1-2 minutes until slightly tender but still crisp.
- 6. Return the caramelized tomatoes to the skillet along with the prepared tomato-soy sauce mixture. Stir everything together to combine.
- 7. Cover the skillet and let the mixture cook for 3-4 minutes over medium heat, stirring occasionally, until the sauce thickens and everything is heated through.
- 8. Remove from heat and serve the stir-fry hot with steamed rice or noodles for a complete dinner.
