  • 100 g Garlic
  • loose Ginger
  • 90 g Dark Soy Sauce
  • 200 g Table Salt
  • 500 g Sugar
  • 500 Ml Champion Oil

Instructions

  1. 1. Rinse 1 cup of wild rice thoroughly under cold water until the water runs clear.
  2. 2. In a medium-sized pot, combine the rinsed wild rice with 2 cups of water and a pinch of salt. Bring to a boil.
  3. 3. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for 40-45 minutes, or until the rice is tender and the water is absorbed. Remove from heat and set aside.
  4. 4. While the rice is cooking, prepare the vegetables: finely chop 1 medium onion, 1 medium carrot, 1 bell pepper, and 1 cup of broccoli florets.
  5. 5. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  6. 6. Add the chopped onion to the skillet and sauté for 2-3 minutes until it becomes translucent.
  7. 7. Add the chopped carrot and broccoli to the skillet and stir-fry for 4-5 minutes until they start to soften.
  8. 8. Add the chopped bell pepper to the skillet and continue to stir-fry for another 2-3 minutes.
  9. 9. In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, and 1 teaspoon of sugar.
  10. 10. Add the cooked wild rice to the skillet with the vegetables and pour the sauce mixture over the top.
  11. 11. Stir everything together well, ensuring the rice and vegetables are evenly coated with the sauce.
  12. 12. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
  13. 13. Taste and adjust seasoning if needed, adding more soy sauce or salt according to your preference.
  14. 14. Garnish with chopped spring onions and toasted sesame seeds before serving.
  15. 15. Serve the veg wild rice stir-fry hot as a main dish or a side dish.
