- 100 g Garlic
- loose Ginger
- 500 g Onion
- - Bell Peppers
- - Chicken Breast
- 50G Green Chilies
- 200 g Table Salt
- 430 ml Oyster Sauce
- 100 g Cornflour
- 500 Ml Champion Oil
- 90 g Dark Soy Sauce
Instructions
- 1. Gather all ingredients: 300g boneless chicken (cut into thin strips), 2 tbsp fermented black beans (rinsed and lightly mashed), 1 medium onion (sliced), 1 bell pepper (sliced), 2-3 garlic cloves (minced), 1-inch ginger (julienned), 2 green chilies (sliced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 tbsp cornflour, 2 tbsp vegetable oil, and salt to taste.
- 2. Marinate the chicken: In a bowl, combine the chicken strips with 1 tbsp soy sauce, 1 tsp sugar, 1 tbsp cornflour, and a pinch of salt. Mix well and let it marinate for 15-20 minutes.
- 3. Prepare the sauce: In a small bowl, mix 1 tbsp soy sauce, 1 tbsp oyster sauce, and 2 tbsp water. Set aside.
- 4. Heat 1 tbsp vegetable oil in a wok or large frying pan over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes until it is cooked through and slightly browned. Remove the chicken and set aside.
- 5. In the same wok, add the remaining 1 tbsp vegetable oil. Add the minced garlic, julienned ginger, and sliced green chilies. Stir-fry for 30 seconds until fragrant.
- 6. Add the sliced onion and bell pepper to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.
- 7. Add the mashed fermented black beans to the wok and stir-fry for another 1 minute to release their aroma.
- 8. Return the cooked chicken to the wok and mix well with the vegetables and black beans.
- 9. Pour the prepared sauce over the chicken and vegetables. Stir-fry for 1-2 minutes until everything is well coated and heated through.
- 10. Taste and adjust seasoning with salt if needed. If the stir-fry is too dry, add a splash of water and mix well.
- 11. Remove from heat and transfer the stir-fry to a serving dish. Serve hot with steamed rice or noodles.
