- 100 g Garlic
- 500 g Onion
- - Bell Peppers
- - Shiitake Mushrooms
- 90 g Dark Soy Sauce
- 200 ml Sesame Oil
- 10G Salt
Instructions
- 1. Rinse 200g of fresh shiitake mushrooms and pat them dry. Remove the stems and slice the caps thinly.
- 2. Chop 1 medium-sized onion, 1 medium-sized bell pepper, and 2-3 cloves of garlic finely. Also, chop 1/4 cup of spring onion greens for garnish.
- 3. In a small bowl, mix 2 tbsp soy sauce, 1 tbsp oyster sauce (vegetarian version), 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, and 2 tbsp water. Stir well to combine and set the sauce aside.
- 4. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
- 5. Add the chopped garlic and stir-fry for 30 seconds until fragrant.
- 6. Add the sliced shiitake mushrooms and stir-fry for 3-4 minutes until they begin to soften and release their juices.
- 7. Add the chopped onion and bell pepper to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender but still crisp.
- 8. Pour the prepared sauce over the vegetables and mushrooms. Stir well to coat everything evenly and cook for 1-2 minutes, allowing the flavors to meld.
- 9. Turn off the heat and garnish the stir-fry with the chopped spring onion greens.
- 10. Serve hot with steamed rice or noodles.
