  • 190 ml White Cooking Vinegar
  • 500 g Sugar
  • 500 Ml Champion Oil

Instructions

  1. 1. Gather all ingredients: 250 grams of lotus root, 1 medium carrot, 1 small bell pepper, 2 green chilies, 1 small onion, 2 cloves of garlic, 1-inch piece of ginger, 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 teaspoon of sugar, 1/2 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 2 tablespoons of vegetable oil, and salt to taste.
  2. 2. Peel and slice the lotus root into thin rounds. Soak the slices in water with a pinch of salt and a few drops of vinegar to prevent discoloration.
  3. 3. Peel and julienne the carrot. Slice the bell pepper into thin strips. Finely chop the onion, green chilies, garlic, and ginger.
  4. 4. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
  5. 5. Add the chopped garlic, ginger, and green chilies to the hot oil. Sauté for 1 minute until fragrant.
  6. 6. Add the chopped onion to the pan and sauté for 2-3 minutes until it becomes translucent.
  7. 7. Drain the lotus root slices and add them to the pan. Stir well to coat the slices with the aromatic mixture.
  8. 8. Add the julienned carrot and bell pepper strips to the pan. Mix everything thoroughly.
  9. 9. Sprinkle 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and salt to taste over the vegetables. Stir well to evenly distribute the spices.
  10. 10. Add 2 tablespoons of soy sauce and 1 tablespoon of vinegar to the pan. Mix well to combine.
  11. 11. Stir in 1 teaspoon of sugar to balance the flavors. Mix everything thoroughly.
  12. 12. Cook the stir-fry for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
  13. 13. Taste and adjust the seasoning if necessary, adding more salt, soy sauce, or vinegar as per your preference.
  14. 14. Once the vegetables are cooked to your liking, remove the pan from the heat.
  15. 15. Transfer the Lotus Root Stir-Fry to a serving dish and garnish with fresh cilantro or spring onion greens if desired.
  16. 16. Serve hot as a side dish with steamed rice or as a main dish with flatbreads like roti or naan.
