Ingredients
- 250 g Zucchini Green
- 500 g Carrot
- 250 g Organically Grown Green Capsicum
- 100 g Sambar Onion Peeled
- 500 ml Conscious Food Cold Pressed Coconut Oil
- 750 ml Catch Clear Lemon N Lime Flavoured Water
- 350 g Mevano Premium Organic Coconut Sugar
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
- 100 g Zoff Garlic Powder
Instructions
- 1. Slice the zucchini and carrots into julienne strips. Slice the green pepper into thin strips and the onion into rounds.
- 2. Combine the zucchini, carrots, green pepper, and onion in a microwave-safe baking dish.
- 3. Dot the vegetables with 2 tablespoons of coconut oil and add 1/4 cup of water to the dish.
- 4. Season the vegetables with salt, pepper, and 1/2 teaspoon of garlic powder to taste.
- 5. Sprinkle 1 teaspoon of coconut sugar evenly over the vegetables for a hint of sweetness.
- 6. Cover the dish with microwave-safe plastic wrap, leaving a small opening for steam to escape.
- 7. Microwave the dish on high for 13 to 14 minutes, depending on the size of your dish, until the vegetables are tender.
- 8. Carefully remove the plastic wrap and drain any excess liquid from the dish.
- 9. Serve the vegetable medley warm as a satisfying vegan dinner.
