Ingredients

  • - Basil Leaves
  • - Chicken Breast
  • 500 g Tomato - Hybrid
  • 250 g Fresh Mozzarella Cheese
  • - Olive Oil
  • 20 g Oregano
  • - Thyme Leaves
  • 60G Primi Piatti Red Chilli Flakes
  • - Garlic Powder
  • 100 g Salt
  • 50 g Black Pepper Powder
  • 500Ml De Nigris Balsamic Vinegar

Instructions

  1. 1. Preheat a grill pan or outdoor grill over medium-high heat. In a small bowl, mix olive oil, dried oregano, thyme, garlic powder, red chili flakes, salt, and black pepper to create a marinade.
  2. 2. Rub the marinade evenly over the chicken breasts and let them sit for 10-15 minutes to absorb the flavors.
  3. 3. Place the chicken breasts on the hot grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). Remove from the grill and let them rest for 5 minutes before slicing.
  4. 4. While the chicken rests, prepare the balsamic reduction by heating balsamic vinegar and sugar in a small pan over low heat. Stir until the sugar dissolves and the mixture reduces to a syrupy consistency, about 3-4 minutes. Set aside to cool.
  5. 5. Arrange the tomato slices, mozzarella slices, and fresh basil leaves on a serving platter in an alternating pattern. Drizzle a little olive oil on top for added flavor.
  6. 6. Slice the grilled chicken and place it on the platter alongside the tomato and mozzarella arrangement. Drizzle the balsamic reduction over the entire dish.
  7. 7. Serve immediately as a main course salad, ensuring each serving includes a balance of chicken, mozzarella, tomato, and basil.
