- 500G Poha (Flattened Rice)
- 500 g Onion
- 500 g Tomato - Hybrid
- 250 g Carrot
- - Green Peas
- 200 ml Mustard Oil
- 100 g Salt
- medium Chilli Green Long
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- 250 ml Lemon Juice Concentrate
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the poha under cold running water in a colander for 10-15 seconds. Let it drain completely and set aside.
- 2. Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Then add curry leaves and green chili, sautéing for 30 seconds.
- 3. Add the chopped onion and cook until it turns translucent. Stir in the grated carrot and green peas, cooking for 2-3 minutes until slightly tender.
- 4. Add the chopped tomato, turmeric powder, and salt. Cook for another 2 minutes, stirring to combine the flavors.
- 5. Gently fold in the rinsed poha, ensuring it is evenly coated with the vegetable mixture. Cook for 2-3 minutes on low heat, stirring occasionally.
- 6. Turn off the heat and mix in the lemon juice and roasted peanuts. Adjust salt if needed.
- 7. Garnish with fresh coriander leaves and serve warm.
