Ingredients
- 100 g Broccoli Florets
- 500 g Organically Grown Tomato (Hybrid) (Tamatar)
- 200 g Ginger
- 60G Primi Piatti Red Chilli Flakes
- 2 ltr Figaro Extra Light Olive Oil
- 100 g Catch Sprinklers - Iodized Table Salt
Instructions
- 1. Separate the broccoli heads into small florets and peel and slice the stems.
- 2. Blanch the florets and stems in boiling salted water for 3-4 minutes until crisp-tender. Drain thoroughly and set aside.
- 3. Cut the tomatoes lengthwise into eighths and set aside.
- 4. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Stir-fry 1 tablespoon of minced ginger for a few seconds until fragrant.
- 5. Add the blanched broccoli, sliced tomatoes, and 1/8 teaspoon of red pepper flakes to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
- 6. Add 2 tablespoons of tomato juice and stir-fry for another 30 seconds to combine the flavors.
- 7. Serve the dish hot, at room temperature, or chilled as desired.
