Kosher Spiced Broccoli and Tomatoes recipe

Ingredients

  • 100 g Broccoli Florets
  • 500 g Organically Grown Tomato (Hybrid) (Tamatar)
  • 200 g Ginger
  • 60G Primi Piatti Red Chilli Flakes
  • 2 ltr Figaro Extra Light Olive Oil
  • 100 g Catch Sprinklers - Iodized Table Salt

Instructions

  1. 1. Separate the broccoli heads into small florets and peel and slice the stems.
  2. 2. Blanch the florets and stems in boiling salted water for 3-4 minutes until crisp-tender. Drain thoroughly and set aside.
  3. 3. Cut the tomatoes lengthwise into eighths and set aside.
  4. 4. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Stir-fry 1 tablespoon of minced ginger for a few seconds until fragrant.
  5. 5. Add the blanched broccoli, sliced tomatoes, and 1/8 teaspoon of red pepper flakes to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
  6. 6. Add 2 tablespoons of tomato juice and stir-fry for another 30 seconds to combine the flavors.
  7. 7. Serve the dish hot, at room temperature, or chilled as desired.
