- 250 g Carrot
- 1 pack Mushrooms Button
- 1 bunch Spring Onion
- 6 pcs White Eggs
- - Vegetable Stock Cubes
- 200 g Organic Tofu - Soy Paneer
- 100 g Ginger
- 200 ml Sesame Oil
- 200 g Table Salt
- 50 g White Pepper Powder
- 100 g Cornflour
- 500 g Sugar
- - Garlic Paste
- 90 g Dark Soy Sauce
Instructions
- 1. Heat 1 tablespoon of sesame oil in a large pot over medium heat.
- 2. Add 1 teaspoon of minced garlic and 1 teaspoon of minced ginger, sauté for 1 minute until fragrant.
- 3. Pour in 4 cups of vegetable broth and bring to a gentle boil.
- 4. Add 1/4 cup of sliced mushrooms, 1/4 cup of shredded carrots, and 1/4 cup of diced tofu. Simmer for 5 minutes.
- 5. In a small bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of chili sauce, and 1 teaspoon of sugar. Stir this mixture into the soup.
- 6. In another small bowl, mix 2 tablespoons of cornstarch with 3 tablespoons of water to create a slurry. Slowly pour this into the soup while stirring continuously to thicken it.
- 7. Beat 1 egg in a separate bowl and slowly drizzle it into the soup while stirring gently to create egg ribbons.
- 8. Add 1/2 teaspoon of white pepper and salt to taste. Stir well.
- 9. Garnish with chopped spring onions and a drizzle of sesame oil before serving.
