Ingredients

  • 100 g Coriander Leaves
  • - Parsley - 50 G
  • - Besan
  • 250 g Spinach
  • 500 g Tomato - Hybrid
  • 500 g Capsicum Green
  • 20 g Oregano
  • - Thyme Leaves
  • 100 g Garlic
  • - Rice Flour
  • - Coconut Oil
  • 50 g Asafoetida Powder
  • 50 g Black Pepper Powder
  • 100 g Salt

Instructions

  1. 1. Preheat your oven to 200°C (392°F). In a mixing bowl, combine chickpea flour, rice flour, 1 tsp salt, 1 tsp black pepper powder, and 1 tsp asafoetida. Add 2 tbsp coconut oil and mix until crumbly. Slowly add water until the mixture forms a firm dough. Roll out the dough into a thin circle on parchment paper and transfer to a baking tray.
  2. 2. In another bowl, prepare the filling by mixing cooked lentils, chopped spinach, tomatoes, diced bell peppers, oregano, thyme, and lemon juice. Adjust seasoning with salt and pepper as needed.
  3. 3. Spread the lentil mixture evenly over the prepared crust, leaving a 2-inch border around the edges. Fold the edges of the crust over the filling to create a rustic galette shape.
  4. 4. Bake the galette in the preheated oven for 25-30 minutes or until the crust is golden and crispy. Remove from the oven and let cool slightly.
  5. 5. Garnish the galette with freshly chopped coriander before serving. Slice and enjoy this garden-fresh snack warm or at room temperature.
