- - Besan
- 250 g Spinach
- 500 g Tomato - Hybrid
- 500 g Capsicum Green
- 20 g Oregano
- - Thyme Leaves
- 100 g Garlic
- - Rice Flour
- - Coconut Oil
- 50 g Asafoetida Powder
- 50 g Black Pepper Powder

Instructions
- 1. Preheat your oven to 200°C (392°F). In a mixing bowl, combine chickpea flour, rice flour, 1 tsp salt, 1 tsp black pepper powder, and 1 tsp asafoetida. Add 2 tbsp coconut oil and mix until crumbly. Slowly add water until the mixture forms a firm dough. Roll out the dough into a thin circle on parchment paper and transfer to a baking tray.
- 2. In another bowl, prepare the filling by mixing cooked lentils, chopped spinach, tomatoes, diced bell peppers, oregano, thyme, and lemon juice. Adjust seasoning with salt and pepper as needed.
- 3. Spread the lentil mixture evenly over the prepared crust, leaving a 2-inch border around the edges. Fold the edges of the crust over the filling to create a rustic galette shape.
- 4. Bake the galette in the preheated oven for 25-30 minutes or until the crust is golden and crispy. Remove from the oven and let cool slightly.
- 5. Garnish the galette with freshly chopped coriander before serving. Slice and enjoy this garden-fresh snack warm or at room temperature.
