Ingredients
- 1 pc (approx. 500 g to 800 g) Cabbage
- 1 bunch Spring Onion
- 200 g Organic Tofu - Soy Paneer
- 1 kg Bell Peppers
- - Edamame
- 300 g Shiro Miso Paste
- 500Ml Habit Toasted Sesame Oil Cold Presses
- 100 g Til
- - Rice Vinegar
- 50 g Asafoetida Powder
- 250 g Cucumber
- 50 g Black Pepper Powder
Instructions
- 1. Cook the -free buckwheat soba noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process and set aside.
- 2. Heat a non-stick pan over medium heat and add sesame oil. Sear the tofu cubes until golden on all sides, about 6-8 minutes. Remove and set aside.
- 3. In the same pan, add asafoetida and stir briefly. Then, lightly sauté the shredded cabbage, bell peppers, and edamame for 2-3 minutes to retain their crunch.
- 4. In a small mixing bowl, whisk together the miso paste, soy sauce, rice vinegar, and black pepper until smooth. Add a tablespoon of water if needed to thin it out slightly.
- 5. In a large mixing bowl, combine the cooked soba noodles, sautéed vegetables, seared tofu, and the miso dressing. Toss gently to coat everything evenly.
