  • 1 bunch Spring Onion
  • 200 g Organic Tofu - Soy Paneer
  • 1 kg Bell Peppers
  • - Edamame
  • 300 g Shiro Miso Paste
  • 500Ml Habit Toasted Sesame Oil Cold Presses
  • 100 g Til
  • - Rice Vinegar
  • 50 g Asafoetida Powder
  • 250 g Cucumber
  • 50 g Black Pepper Powder

Instructions

  1. 1. Cook the -free buckwheat soba noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process and set aside.
  2. 2. Heat a non-stick pan over medium heat and add sesame oil. Sear the tofu cubes until golden on all sides, about 6-8 minutes. Remove and set aside.
  3. 3. In the same pan, add asafoetida and stir briefly. Then, lightly sauté the shredded cabbage, bell peppers, and edamame for 2-3 minutes to retain their crunch.
  4. 4. In a small mixing bowl, whisk together the miso paste, soy sauce, rice vinegar, and black pepper until smooth. Add a tablespoon of water if needed to thin it out slightly.
  5. 5. In a large mixing bowl, combine the cooked soba noodles, sautéed vegetables, seared tofu, and the miso dressing. Toss gently to coat everything evenly.
  6. 6. Divide the mixture into serving bowls. Top with julienned cucumber, chopped spring onion, toasted sesame seeds, and a sprinkle of chili flakes for an extra kick.
  7. 7. Serve immediately and enjoy this refreshing and comforting breakfast dish!
