- 250 ml Olive Oil
- 100 g Curry Leaves
- 50 g Asafoetida Powder
- - Green Peas
- 100 g Coriander Leaves
- 250 ml Lemon Juice Concentrate
- 500 g Capsicum Green
- 500 g Rava
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat a dry pan over low heat and toast the semolina for 3-4 minutes until lightly golden, stirring frequently. Remove from the pan and set aside.
- 2. In the same pan, heat oil over medium heat and add mustard seeds. Once they begin to splutter, add cumin seeds, curry leaves, green chili, and asafoetida, sautéing for 30 seconds until aromatic.
- 3. Add the green peas, diced tomatoes, and chopped bell peppers to the pan. Sprinkle turmeric powder and salt, and cook for 3-4 minutes, stirring occasionally, until the vegetables soften slightly.
- 4. Gradually add the toasted semolina to the pan, stirring continuously to combine with the vegetables and spices.
- 5. Pour in enough hot water to cover the mixture, stirring constantly to prevent lumps. Reduce the heat to low, cover the pan, and let the upma cook for 5-7 minutes until the semolina absorbs the water and becomes fluffy.
- 6. Turn off the heat and stir in the chopped coriander leaves and lemon juice. Adjust seasoning if needed.
- 7. Serve the upma hot as a wholesome breakfast, garnished with additional coriander leaves if desired.
