Ingredients

- 200 g Dahi
- 1 box Baking Soda
- 200 ml Mustard Oil
- 100 g Coriander Leaves
- 200 g Roasted Chana Dal
- 1 piece Coconut
- 250g Ginger
- - Chilli Green 100 G
- 500 g Rava
- 50 g Asafoetida Powder
- 100 g Curry Leaves
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a mixing bowl, combine semolina, grated coconut, yogurt, baking soda, and salt. Mix thoroughly and let it rest for 15 minutes to hydrate.
- 2. Grease idli molds with a little oil. Pour the batter into the molds, ensuring they are not overfilled.
- 3. Steam the idlis in a steamer for 10-12 minutes until they are fluffy and cooked through. Remove from heat and let them cool slightly before demolding.
- 4. For the tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves, green chilies, and asafoetida, sautéing briefly until fragrant.
- 5. Prepare the coriander chutney by blending chopped coriander leaves, roasted chana dal, grated coconut, ginger, lemon juice, and a pinch of salt into a smooth paste.
- 6. Serve the steamed idlis topped with the tempering mixture and a side of fresh coriander chutney.
