Egg Pohe is a flavorful and wholesome breakfast dish from India, combining the lightness of flattened rice (poha) with the protein-rich goodness of eggs. This quick and easy recipe is packed with spices and fresh herbs, making it ideal for busy mornings without compromising on taste.
Ingredients
- 100 g Curry Leaves
- 100 g Coriander Leaves
- 500 g Poha
- 6 pcs White Eggs
- 500 g Onion
- medium Chilli Green Long
- 100 g Yellow Mustard Seeds
- 100 g Jeera
- 20 g Turmeric Powder
- 1 liter Sunflower Oil
- 100 g Salt
- 50 g Black Pepper
- 250 ml Lemon Juice Concentrate
Instructions
- 1. Rinse the poha (flattened rice) thoroughly under cold water in a colander until it softens. Drain well and set aside.
- 2. In a mixing bowl, whisk the eggs with a pinch of salt and black pepper until smooth. Keep aside.
- 3. Heat oil in a large pan or wok over medium heat. Add mustard seeds and let them crackle, followed by cumin seeds.
- 4. Add finely chopped onions, green chilies, and curry leaves to the pan. Sauté until the onions turn golden brown.
- 5. Stir in turmeric powder, followed by the softened poha. Mix gently to coat the poha with the spices.
- 6. Push the poha to one side of the pan and pour the whisked eggs into the other side. Scramble the eggs until they are cooked through, then mix them with the poha.
- 7. Add a squeeze of lemon juice, chopped coriander leaves, and adjust salt as needed. Mix everything well and cook for another 2-3 minutes.
- 8. Serve hot with a side of chutney or yogurt for a complete breakfast experience.
