Ingredients

  • - Mint Leaf
  • 100 g Coriander Leaves
  • 250 ml Lemon Juice Concentrate
  • 6 pcs White Eggs
  • - Cheddar Cheese Powder 100g
  • medium Chilli Green Long
  • loose Ginger
  • 100 g Garlic
  • 100 g Salt
  • 100 g Unsalted Butter
  • 50 g Black Pepper
  • 400 g Bread - Sandwich

Instructions

  1. 1. Prepare the green chutney by blending coriander leaves, mint leaves, green chilies, ginger, garlic, lemon juice, and salt into a smooth paste. Adjust seasoning as needed.
  2. 2. Toast the bread slices on a hot pan or in a toaster until golden brown and crisp. Set aside.
  3. 3. Heat butter in a non-stick pan over medium heat. Crack the eggs into the pan and season with salt and black pepper. Cook until the whites are set and yolks are still runny (or to your preferred doneness).
  4. 4. Spread a generous layer of green chutney on each toasted bread slice. Place one fried egg on top of each slice.
  5. 5. Sprinkle grated cheese over the eggs and toast. Place the slices back onto the pan and cover with a lid, allowing the cheese to melt for 2-3 minutes.
  6. 6. Garnish with chopped coriander leaves and serve hot with a side of ketchup or additional chutney.
