Ingredients
- 6 pcs White Eggs
- - Green Chutney
- 250 g Carrot
- 50 Grms Garam Masala Handmade Spices 50 Grms
- 1 Kg Lokwan Premium Wheat Atta 1 Kg
- 100 g Salt
- 100 g Jeera
- 200 ml Mustard Oil
- medium Chilli Green Long
- 200G Adrak Lasun Paste (200g)
- 20 g Turmeric Powder
- - Red Chilli Powder
- 500 g Onion
- 100 g Lemon
Instructions
- 1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and water to form a smooth dough. Knead for 5 minutes and let it rest.
- 2. Heat a non-stick pan and dry roast cumin seeds for 1 minute. Add a tablespoon of oil, followed by finely chopped onions, green chilies, and ginger-garlic paste. Sauté until golden brown.
- 3. Add turmeric powder, red chili powder, garam masala, and salt to the pan. Stir well and cook for 1 minute before adding beaten eggs. Scramble the mixture until cooked and set aside.
- 4. Divide the dough into 4 equal portions, roll them into thin circles, and cook each one on a hot pan with a little oil until golden spots appear on both sides.
- 5. Take each cooked paratha, spread a layer of green chutney, and place a portion of the scrambled egg mixture in the center. Top with sliced onions, julienned carrots, and a squeeze of lemon juice.
- 6. Roll the paratha tightly around the filling, wrap it in parchment paper, and serve hot.
