- 500 g Onion
- 500 g Capsicum Green
- - Green Chutney
- 500 g Tomato - Hybrid
- 200 ml Mustard Oil
- 100 g Unsalted Butter
- 100 g Salt
- 20 g Turmeric Powder
- - Red Chilli Powder
- 50 Grms Garam Masala Handmade Spices 50 Grms
- 50 g Chat Masala
Instructions
- 1. Prepare the egg mixture by whisking eggs in a bowl and seasoning with salt, turmeric, chili powder, and garam masala.
- 2. Heat 1 tablespoon of oil in a pan and pour the egg mixture, scrambling gently until fully cooked. Set aside.
- 3. Slice onions, tomatoes, and capsicum thinly. Mix these vegetables with chaat masala and lemon juice in a bowl for a tangy topping.
- 4. Prepare the parathas by heating them on a tawa with a small amount of butter until golden and soft.
- 5. Layer the paratha with a spread of green chutney, followed by the scrambled egg mixture and the seasoned vegetables.
- 6. Roll the paratha tightly into a Frankie, securing with parchment paper or foil for easy handling. Serve hot with ketchup or chutney.
