- 20G Curry Leaves
- 1 Kg Idly/Dosa Batter
- 6 pcs White Eggs
- 50G Green Chilies
- 1 liter Sunflower Oil
- 100 g Salt
- 50 g Black Pepper Powder
Instructions
- 1. In a large mixing bowl, prepare the dosa batter if not already ready. If using store-bought batter, ensure it is at room temperature and whisk to ensure it is lump-free.
- 2. Heat a flat non-stick dosa tawa (griddle) on medium heat until hot. Lightly grease it using a few drops of oil spread with a kitchen tissue.
- 3. Pour a ladle of dosa batter in the center of the tawa and quickly spread it in a circular motion to form a thin, even layer. Drizzle a few drops of oil around the edges.
- 4. Crack one egg directly onto the dosa and spread the egg evenly across the surface using a spatula or spoon. Sprinkle a pinch of salt and black pepper over the egg.
- 5. Allow the dosa to cook until the edges start to lift and the egg is fully cooked. This should take about 2-3 minutes. Flip the dosa carefully if you prefer the egg cooked on both sides, or leave it unflipped for a sunny-side-up style.
- 6. Once cooked, fold the dosa in half or roll it up, and transfer it to a serving plate. Repeat the process for the remaining batter and eggs.
- 7. Serve the egg dosas hot with coconut chutney, tomato chutney, or sambar for an authentic South Indian breakfast experience.
