Ingredients
- 100 g Coriander Leaves
- 6 pcs White Eggs
- 50 Grms Garam Masala Handmade Spices 50 Grms
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- loose Ginger
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Salt
- 50 g Black Pepper
- 200 ml Mustard Oil
- 500 g Onion
Instructions
- 1. Finely chop the onion, tomato, green chilies, and coriander leaves. Grate the ginger and keep all the prep ingredients ready.
- 2. Break the eggs into a bowl, add a pinch of salt and pepper, and whisk them until well combined.
- 3. Heat oil in a pan over medium heat and add cumin seeds. Once they start to sizzle, add the chopped onions and sauté until golden brown.
- 4. Add the grated ginger, green chilies, and the chopped tomatoes. Cook until the tomatoes soften and the mixture becomes aromatic.
- 5. Add turmeric powder, red chili powder, and garam masala. Stir well to combine with the onion-tomato mixture.
- 6. Pour the whisked eggs into the pan and cook, stirring continuously, until the eggs scramble and cook through. Adjust seasoning with salt if needed.
- 7. Remove the egg bhurji from heat and mix in fresh coriander leaves. Set aside to cool slightly.
- 8. Warm the parathas on a hot skillet or tawa until they are soft and pliable.
- 9. Place a portion of the egg bhurji on each paratha, top with thinly sliced onions and a drizzle of ketchup or mint chutney. Roll tightly.
- 10. Serve immediately or wrap in foil for a portable snack.
