Ingredients

  • 100 g Coriander Leaves
  • 6 pcs White Eggs
  • 50 Grms Garam Masala Handmade Spices 50 Grms
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • loose Ginger
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 100 g Salt
  • 50 g Black Pepper
  • 200 ml Mustard Oil
  • 500 g Onion

Instructions

  1. 1. Finely chop the onion, tomato, green chilies, and coriander leaves. Grate the ginger and keep all the prep ingredients ready.
  2. 2. Break the eggs into a bowl, add a pinch of salt and pepper, and whisk them until well combined.
  3. 3. Heat oil in a pan over medium heat and add cumin seeds. Once they start to sizzle, add the chopped onions and sauté until golden brown.
  4. 4. Add the grated ginger, green chilies, and the chopped tomatoes. Cook until the tomatoes soften and the mixture becomes aromatic.
  5. 5. Add turmeric powder, red chili powder, and garam masala. Stir well to combine with the onion-tomato mixture.
  6. 6. Pour the whisked eggs into the pan and cook, stirring continuously, until the eggs scramble and cook through. Adjust seasoning with salt if needed.
  7. 7. Remove the egg bhurji from heat and mix in fresh coriander leaves. Set aside to cool slightly.
  8. 8. Warm the parathas on a hot skillet or tawa until they are soft and pliable.
  9. 9. Place a portion of the egg bhurji on each paratha, top with thinly sliced onions and a drizzle of ketchup or mint chutney. Roll tightly.
