Ingredients

  • 100 g Curry Leaves
  • 100 g Tamarind
  • - Grated Coconut
  • 500 g Urad Dal
  • 200 g Table Salt
  • 100 g Yellow Mustard Seeds
  • 500 Ml Champion Oil

Instructions

  1. 1. Gather all ingredients: 1 cup fresh curry leaves, ½ cup grated coconut (fresh or desiccated), 2-3 green chilies, 1 small piece of tamarind (or ½ tsp tamarind paste), 1 tsp mustard seeds, 1 tsp urad dal, 1 dried red chili, 1 tbsp oil, and salt to taste.
  2. 2. Wash the curry leaves thoroughly under running water and pat them dry using a clean kitchen towel.
  3. 3. Heat ½ tbsp oil in a small pan over medium heat. Add the curry leaves and sauté for 1-2 minutes until they become crisp. Remove and set aside to cool.
  4. 4. In the same pan, add the grated coconut and roast it lightly for 1-2 minutes until it turns aromatic. Remove and set aside to cool.
  5. 5. In a blender or mixer jar, add the sautéed curry leaves, roasted coconut, green chilies, tamarind, and a pinch of salt. Blend into a coarse or smooth paste, adding a little water (1-2 tbsp) as needed.
  6. 6. Transfer the chutney to a serving bowl and set aside.
  7. 7. For tempering, heat the remaining ½ tbsp oil in the same pan. Add mustard seeds and let them splutter.
  8. 8. Add urad dal and sauté until it turns golden brown. Then, add the dried red chili and sauté for a few seconds.
  9. 9. Pour the tempering over the prepared chutney and mix gently.
