Ingredients
- 100 g Curry Leaves
- 100 g Tamarind
- - Grated Coconut
- 500 g Urad Dal
- 200 g Table Salt
- 100 g Yellow Mustard Seeds
- 500 Ml Champion Oil
Instructions
- 1. Gather all ingredients: 1 cup fresh curry leaves, ½ cup grated coconut (fresh or desiccated), 2-3 green chilies, 1 small piece of tamarind (or ½ tsp tamarind paste), 1 tsp mustard seeds, 1 tsp urad dal, 1 dried red chili, 1 tbsp oil, and salt to taste.
- 2. Wash the curry leaves thoroughly under running water and pat them dry using a clean kitchen towel.
- 3. Heat ½ tbsp oil in a small pan over medium heat. Add the curry leaves and sauté for 1-2 minutes until they become crisp. Remove and set aside to cool.
- 4. In the same pan, add the grated coconut and roast it lightly for 1-2 minutes until it turns aromatic. Remove and set aside to cool.
- 5. In a blender or mixer jar, add the sautéed curry leaves, roasted coconut, green chilies, tamarind, and a pinch of salt. Blend into a coarse or smooth paste, adding a little water (1-2 tbsp) as needed.
- 6. Transfer the chutney to a serving bowl and set aside.
- 7. For tempering, heat the remaining ½ tbsp oil in the same pan. Add mustard seeds and let them splutter.
- 8. Add urad dal and sauté until it turns golden brown. Then, add the dried red chili and sauté for a few seconds.
- 9. Pour the tempering over the prepared chutney and mix gently.
- 10. Serve the Curry Leaf and Coconut Chutney immediately with idli, dosa, or any South Indian breakfast dish. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
