Ingredients
- 250 g French Beans
- 1 bunch Spring Onion
- 20 g Turmeric Powder
- - Rice Vinegar
- 1 Kg Kissan Tomato Puree
- 100 g Salt
- 50 g Black Pepper Powder
- 1 kg Bell Peppers
- 50 g Asafoetida Powder
- 100 g Cornflour
- - Red Chilli Powder
- 200 g Organic Tofu - Soy Paneer
- 1 pc (approx. 500 g to 800 g) Cabbage
- 250 ml Lemon Juice Concentrate
- 1 l Rice Bran Oil
- 500 g Sugar
Instructions
- 1. Press the tofu to remove excess moisture, then cut into bite-sized cubes. Toss the cubes with cornstarch, turmeric powder, chili powder, and a pinch of salt to coat evenly.
- 2. Heat 1 tbsp of rice bran oil in a pan over medium heat. Add the tofu cubes and pan-fry for 6-8 minutes, turning occasionally, until golden and crispy. Remove and set aside.
- 3. Cook the lo mein noodles as per package instructions. Drain and set aside.
- 4. In the same pan, add asafoetida, chopped bell peppers, shredded cabbage, and green beans. Stir-fry for 5-6 minutes until the vegetables are tender but still crunchy.
- 5. Reduce the heat and mix in tomato puree, vinegar, lemon juice, sugar, black pepper powder, spring onions and salt. Stir well to create a flavorful sauce.
- 6. Add the cooked noodles to the pan and toss with the vegetable mixture. Ensure the noodles are evenly coated with the sauce.
- 7. Fold in the crispy tofu gently and cook for 2-3 minutes to combine all the flavors. Adjust seasoning if needed.
- 8. Serve hot, garnished with a squeeze of fresh lemon juice for added zest.
