Ingredients
- 200Ml Kara Coconut Milk Classic (200ml)
- - Coconut Oil
- 100 g Curry Leaves
- - Dry Red Chillies
- 100 g Yellow Mustard Seeds
- 100 g Hing Khoda
- - Besan
- 100 g Lemon
- 100 g Coriander Leaves
- - Coriander Powder
- 500 g Jaggery Powder
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Grease idli molds with a light layer of oil and pour the idli batter evenly into the molds. Steam for 10-12 minutes or until a toothpick inserted comes out clean. Remove and set aside.
- 2. Heat coconut oil in a pan over medium heat. Add mustard seeds, and when they start spluttering, add curry leaves, dried red chilies, and hing. Sauté for 30 seconds until aromatic.
- 3. Stir in turmeric powder, red chili powder, and coriander powder. Cook for 30 seconds, taking care not to burn the spices.
- 4. Add coconut milk and bring to a gentle simmer. Stir in roasted gram flour to thicken the sauce, ensuring there are no lumps.
- 5. Season with salt, jaggery (if using), and lemon juice. Simmer the sauce for 2-3 minutes until it reaches a creamy consistency.
