Ingredients
- 500 ml Bertolli Extra Virgin Olive Oil
- 100 g Garlic - Single Clove
- 1 pack (100 g) Grocery Farm Indian Pine Nuts
- 250 g Spinach - Chopped
- 500 g Whole Farm Grocery Raisins 500 G
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pack (100 g) Popular Essentials Black Pepper
Instructions
- 1. Bring a pot of water to a boil, blanch 500 g of fresh spinach for 1-2 minutes until wilted, then drain and squeeze out excess water. Chop the spinach roughly and set aside.
- 2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- 3. Add 2 minced garlic cloves to the skillet and sauté for 1-2 minutes until fragrant.
- 4. Stir in 1/4 cup of pine nuts and cook for another 2-3 minutes, stirring frequently, until they are lightly toasted.
- 5. Add 1/2 cup of raisins to the skillet and cook for 1 minute to soften them.
- 6. Mix in the chopped spinach, season with salt and pepper to taste, and cook on low heat for 5 minutes, stirring occasionally, until everything is well combined and heated through.
- 7. Serve warm as a side dish or a light main course.
