Ingredients
- 250 g Carrot
- - Mint Leaf
- 250 g Cucumber
- 200 g Organic Tofu - Soy Paneer
- 200 G Star Lion Rice Vermicelli
- 1 l Refined Soyabean Oil
- 90 g Dark Soy Sauce
- 240G Hoisin Sauce
- - Garlic Paste
- 300 g Ginger Paste
- 500 G Sugar
Instructions
- 1. Prepare the marinade by mixing 2 tbsp soy sauce, 1 tbsp hoisin sauce, 1 tbsp maple syrup, 1 tbsp minced garlic, 1 tbsp minced ginger, and 1 tbsp sesame oil in a bowl.
- 2. Slice 200g of tofu into thin strips and marinate them in the prepared sauce for at least 30 minutes.
- 3. While the tofu is marinating, cook 200g of rice vermicelli noodles according to the package instructions. Drain and set aside.
- 4. Heat 1 tbsp of vegetable oil in a pan over medium heat. Add the marinated tofu strips and cook for 3-4 minutes on each side until golden brown. Remove from heat and set aside.
- 5. Prepare the vegetables: thinly slice 1 cucumber, 1 carrot, and a handful of fresh mint leaves.
- 6. In a small bowl, mix 2 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp sugar, and 1 tbsp water to make the dipping sauce.
- 7. Assemble the dish by placing a portion of cooked rice vermicelli noodles in a bowl, topping with the cooked tofu strips, sliced cucumber, carrot, and mint leaves.
- 8. Serve with the prepared dipping sauce on the side.
