Ingredients

  • 100 g Coriander Leaves
  • 400-600 g Pumpkin
  • - Besan
  • 200 g Dahi
  • - Rice Flour
  • 1 l Refined Soyabean Oil
  • 100 g Hing Khoda
  • - Coriander Powder
  • 50 g Cumin Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • - Red Chilli Powder

Instructions

  1. 1. Peel and cube the pumpkin into bite-sized pieces, ensuring uniform sizing for even cooking.
  2. 2. In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin powder, coriander powder, hing, and salt. Add yogurt and mix to form a smooth coating paste.
  3. 3. Gently toss the pumpkin cubes in the spice paste, ensuring each piece is evenly coated. Let it marinate for 10 minutes to absorb the flavors.
  4. 4. Preheat the air fryer to 180°C (360°F) for 3 minutes. Lightly brush the air fryer basket with oil to prevent sticking.
  5. 5. Arrange the marinated pumpkin pieces in the air fryer basket in a single layer. Air fry at 180°C (360°F) for 12-15 minutes, flipping halfway through, until the pumpkin is tender and slightly crispy on the edges.
  6. 6. Remove the pumpkin from the air fryer and transfer to a serving dish. Garnish with chopped fresh coriander leaves.
  7. 7. Serve hot with rice, flatbread, or enjoy as a standalone snack.
