Ingredients
- 100 g Coriander Leaves
- 400-600 g Pumpkin
- - Besan
- 200 g Dahi
- - Rice Flour
- 1 l Refined Soyabean Oil
- 100 g Hing Khoda
- - Coriander Powder
- 50 g Cumin Powder
- 100 g Salt
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Peel and cube the pumpkin into bite-sized pieces, ensuring uniform sizing for even cooking.
- 2. In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin powder, coriander powder, hing, and salt. Add yogurt and mix to form a smooth coating paste.
- 3. Gently toss the pumpkin cubes in the spice paste, ensuring each piece is evenly coated. Let it marinate for 10 minutes to absorb the flavors.
- 4. Preheat the air fryer to 180°C (360°F) for 3 minutes. Lightly brush the air fryer basket with oil to prevent sticking.
- 5. Arrange the marinated pumpkin pieces in the air fryer basket in a single layer. Air fry at 180°C (360°F) for 12-15 minutes, flipping halfway through, until the pumpkin is tender and slightly crispy on the edges.
- 6. Remove the pumpkin from the air fryer and transfer to a serving dish. Garnish with chopped fresh coriander leaves.
- 7. Serve hot with rice, flatbread, or enjoy as a standalone snack.
