  • 250 ml Olive Oil
  • - Mint Leaf
  • - Chilli Green 100 G
  • 250 ml Lemon Juice Concentrate
  • - Rice Flour
  • 50 g Asafoetida Powder
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 50 g Amchur (Dry Mango Powder)
  • 100 g Salt

Instructions

  1. 1. Wash the cauliflower florets thoroughly and pat dry. Set aside.
  2. 2. In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, garam masala, asafoetida, dried fenugreek leaves, amchur powder, cumin seeds, yogurt, and salt. Gradually add water to form a smooth, thick batter.
  3. 3. Heat the air fryer to 180°C (350°F) and lightly grease the basket with cooking oil.
  4. 4. Dip each cauliflower floret into the batter, ensuring it is evenly coated, and place it into the air fryer basket.
  5. 5. Air fry the cauliflower for 12-15 minutes, shaking the basket halfway through to ensure even cooking. The florets should turn golden and crispy.
  6. 6. While the cauliflower cooks, prepare the mint chutney by blending fresh mint leaves, green chili, lemon juice, and salt into a smooth paste.
  7. 7. Once the cauliflower is ready, remove from the air fryer and serve hot with the mint chutney on the side.
