Take a clean cloth and add the normal plain curd in it and strain out all the water from it to prepare the hung curd and after that hang the cloth with the curd at any clean place.

Take a cauldron and add ½ cup of sugar in it and mix it well and cook it till its colour changes to brown and the sugar caramalises.

Continue to stir the sugar as it should not stick to the cauldron and when the colour of the sugar changes then add the milk to it slowly and continue mixing it as everything should be even.

When the milk is mixed with the caramelised sugar then again add ½ cup of sugar in it and mix it well as the sugar should be completely dissolved in it.

When the sugar is dissolved then on the other side take a bowl and put all the hung curd in it and then whisk it well to make it very smooth and after that start adding the caramelised milk to it slowly one spoon by spoon.

Once all the milk is added to the hung curd then transfer it to the cups and small bowl and then cover them all with aluminium foil and keep it aside for overnight.

After that bake all the prepared mishit doi for 10 minutes to avoid the liquid texture from the curd and to make it more amazing.

After that place all the cups of mishit doi in refrigerator for 1 hour and then it is prepared.

Serve it as a dessert after main course and enjoy this delicacy of Kolkata.
