First, preheat the oven to 150 degrees Celsius . Break two eggs and separate the egg white and the egg yolk from them in two different bowl and keep it aside.

Add hot water to a steel vessel and put the glass bowl on top of it to form a double boiler. Add butter to it, then add 100 gm cheese and then add 76 ml of milk to it. Whisk it nicely till it forms a smooth mix. Sift 35 gms of flour into the mixture and mix it well till they are evenly mixed.

Add the egg yolk in it and again whisk it nicely. Sift the mixture again to remove any lumps. In a cake mixer, add 2 egg whites and blend it.

Add sugar to the blended egg white and blend it again. Slowly add the sugar one by one by continue whisking it. Add 20gms of sugar and blend it further. Gradually add the remaining sugar and keep blending for 30 minutes until it form soft peaks.

Add the prepared fluffy egg white mixture to the cake batter and then mix it evenly. Slowly add all the prepared egg white mixture and mix it evenly.

Continue mixing it for 5-6 minutes to form a silky texture. Take a cake pan and grease it with non-sticky oil and pour all the batter in it.

Take a thin stick and stir the mixture. Tap the mixture 2-3 times. Place it on a cooking tray which is filled with water and then place the baking tray along with the pan in the preheated oven.

Bake the cake for 20 minutes at 150 degrees Celsius and when once done open half the oven and place a cloth in between the door of the oven and bake it for 25 minutes.

When once it is done take it out and serve it on a plate and it is ready to eat.
